The Moluccas Room at Marina Bay Sands: Indonesian Fusion Food

The Moluccas Room at the Shoppes at Marina Bay Sands, was listed as a casual dining place, but it felt more like fine dining. When we picked it, we didn’t expect fine dining. The prices were high (S$50 per person), but every single item we had was the best we’ve had. Nothing disappointed us and I usually don’t like fusion food, but this still tasted like Indonesian food, only much lighter and more delicate and fragrant somehow. Sorry, I am not good at describing food and that’s the best I can do. This was definitely a wonderful treat and I think the chef and the very attentive female hostess should be complemented. This new restaurant was pretty hard to find as Marina Bay Sands is huge. Right in front of it is the concierge where you can redeem your parking. From the restaurant you can view the pretty lights across the bay.

Doesn’t this look like a Fine Dining restaurant? I am still wondering why it’s listed as casual. But that’s a good idea. Otherwise it would intimidate people like me and I would have never suggested it.

A very different type of chicken satay. Grilled to perfection and the sauce didn’t seem to have peanut in it. Again, I could have gone for more. I am sounding so greedy, but I guess the small portions made the food even more enticing.

Didn’t quite care for the brinjal as I don’t like brinjal very much unless it’s deep fried like chips. But even then I thought it was much better than expected.

Definitely go for the yellow rice instead of the white. Very fragant with the coconut.

This jackfruit pancake dessert is a must try. I highly recommend it.

We left, extremely satisfied and I always like recommending a place when both the food and service is good. If the prices were lower, it would be perfection.
